Some days…

I certainly love Rushton to pieces, but some days he drives me nuts.  Today was one of those days.  I think it started out being my fault – going to bed late, not being able to sleep, Rush waking up early and watching TV on my bed while I tried to get a few more minutes of shut-eye, etc.  I swear that kid would watch Cars non-stop all day if I let him, and sometimes it’s tempting when I just want a nap, but I try not to let him watch too much TV and he’d already had enough before breakfast.  So, 4.5 hours until naptime and what to do…

Plus, being a toddler and a boy, he’s gotten kind of destructive these days.  No longer do we just play with toys – now we chuck them across the room, dump them all out at once, twirl in the curtains, throw toys behind the bookshelf, etc.  And we tried to go on a little walk down the street this afternoon and he wouldn’t follow me for hardly one second.  On the way home, my hands were full, and I’m almost 7 months pregnant, so carrying him wasn’t an option.  One of those times I wish I had brought the stroller…

And now that’s enough venting.  Jake, the rockstar husband that he is, took Rush with him to Scouts tonight, giving me some time to unwind from the kid chaos.

Lucky for you, I just so happen to feel like sharing one of my favorite recipes.  It’s an avocado dip with cream cheese and enough garlic and onion that it’s almost spicy.  Don’t be scared off!! (Although, your significant other might be scared off after you’ve scarfed a few bites of this stuff…)  Seriously though, I beg you to make it – it’s sooo good!!  I made a half recipe today and it’ll be enough to last me a few days without sharing. 🙂

Creamy Avocado Dip

3-4 ripe avocados, pitted and roughly chopped
8 oz. cream cheese, softened
1/4 cup red onion, finely chopped (or less, depending on your taste)
2-4 garlic cloves, finely minced
juice from one lime (or 2 Tbsp. lime juice from the bottle)
salt to taste

Combine all ingredients in a bowl and mix with an electric hand mixer until smooth.  Chill before serving.

Serve with plain potato chips (my personal favorite) or tortilla chips.
