Yummy Sugar Cookies

Standard

These are classic roll-out cookies for holidays.

INGREDIENTS

  • 1 c. sugar
  • 1 c. margarine
  • 1 egg
  • 3-1/2 c. flour
  • 2 tsp. Cream of Tartar
  • 1 tsp. baking soda
  • 1 tsp. vanilla
  • 1/2 c. milk

DIRECTIONS

Cream sugar & margarine together.  Add egg & milk.  Blend in all else (may need to add a little extra flour).  Roll out thick.  Bake on ungreased cookie sheet.  Bake 7 min.

One-Dish Chicken Bake

INGREDIENTS
  • 1 pkg Stove Top stuffing mix for chicken
  • 4 boneless skinless chicken breast halves
  • 1 can (10-3/4 oz) cream of mushroom soup
  • 1/3 c. sour cream or milk

DIRECTIONS

Prepare stuffing as directed.  Place chicken in 12x 8” baking dish. Mix soup & sour cream. Pour over chicken. Top w/stuffing. Bake at 375 for 45 min (or until chicken done).

Twice-Baked Potatoes

This recipe is simple and great for children.

INGREDIENTS

  • 4 medium russet potatoes
  • Vegetable oil to rub on potato skins
  • 2 Tbsp. butter
  • 1/2 c. milk
  • 1/2 c. sour cream
  • 4 oz. shredded cheddar cheese
  • 1/2 tsp. salt
  • Pinch of ground black pepper

DIRECTIONS

Wash potatoes.  Rub w/oil to ensure crispness.  Bake potatoes 1 hour at 400.  Remove from oven and cool for 10 min.  Cut potatoes in ½ lengthwise and scoop out pulp w/small spoon.  Mash potato pulp w/fork until smooth.  Add remaining ingredients until well combined.  Spoon mixture into empty potato shells.  Set oven to broil.  Broil potatoes for 10-15 min until spotty brown & crisp.

Cheese & Potato Soup

INGREDIENTS
  • 1 onion chopped
  • 6 carrots sliced
  • 6-7 large potatoes, cubed
  • 3/4 c. margarine
  • 3/4 c. flour
  • 1 pint half & half
  • 1 pint milk
  • 1-1/2 tsp. salt
  • 1/2 tsp. sugar
  • 1  16 oz. jar cheese whiz

DIRECTIONS

Salt & pepper to taste.  Cover veggies in water-just.  Cover & bring to a boil, simmer for 20 min.  Don’t drain water.  Melt margarine in another pan – add flour, stir until smooth.  Slowly add milk and ½ & ½.  Stir until thick & smooth.  Add jar of cheese whiz.  Pour mixture into veggies.  Stir, then season w/salt, pepper, sugar if desired.

(Good served in bread bowls.)
